Pardon my ignorance but its been Windows all the way untill now, so the information you provide will really be helpful.

Linux is much faster and in my personal opinion best for web servers as Linux doesn't tend to require alot of RAM.

What are you planning to use the server for?

If you are running tests any is fine. I wouldn't recommend Fedora for a running site, as there are many flaws with it's quick releases. Red Hat Enterprise or CentoS are pretty much one in the same so I would suggest either.
