As a host, do you ever get requests to install software for more specific purposes?

I'm not talking about software like ASPEmail or a PDF generator that generally benefits all users but something that would run on your server for the benefit of one, possibly two customers.

For example - would you run an IM server? If so, would you run one written by your customer or only something you knew? (Like Jabber or an open source project.)

We often get requests and we can install but it all depends on what the software is and if the user sends us a valid license. We run tests on all software before installing though as we dont want any thing causing an issue to other users.
