I am new to having a dedicated server. I recently got one and have been reading everything i can with cpanel/whm and can't get an answer to just a few questions. I am hoping someone here will be kind enough to help me.

1. I have had several reseller account before so i know this can be done. When i set up a reseller account and then login to the whm for that new account. i go to set up all the packages. Then when i go to add a account anc choose the package it shows me all the packages for that reseller plus my personal packages for my hosting business. When i had my reseller accounts it was never like this. I know there is somewhere to turn this off i just can't find it. i only want the packages the reseller sets up to be visable to them.

You want to make sure that in the Reseller Center you select "Limit accounts _____ can create by Resource Usage. It tells you that:

or if your account packages are named "root_packagename" where "root" is the username of reseller/host and "packagename" is the name of the package only that user will be able to see those packages.

Good to know. Those WHM options can be worded weird sometimes.

Pick a reseller! Click on ...privileges...! Tic the boxes and only those pertaining to that reseller! That's another way of doing it.
