How should a site be assessed to know whether it is successful as far as search engine rankings are concerned?

What is considered a success

Search engine success, just as business success, is defined differently by each individual. There's no standard.

I agree ldcdc that it is complete up to the websites owner as to what constitutes a good ranking. To me a good ranking is one that brings me enough visitors to make a profit.

IMHO, good ranking are sites that rank in first page of search engine and also having heavy traffic that will lead to conversions.

There's no fixed standard to determine search engine success as it is defined differently by each individual. Getting site listed under the keywords that are being used to find sites is a major success.

Thats true... you try to see for business success and advertize, search engg success will just come up as your business grows.
