If you are a customer, I'd explain it this way, in a nutshell:

OpenVZ is more budget friendly
Xen is more stable

OpenVZ servers can be oversold
Xen Servers cannot

OpenVZ is Linux only
Xen is Linux or Windows

But there is nothing wrong with an OpenVZ VPS and I highly recommended them

Collabora, you offer both. However I love xen-HVM instead of OpenVZ and Xen-PV.

I'd go for Xen as it supports Linux as well as Windows operating systems. It also provides fully independent Kernel install and related modules

The CORRECT term should be harder to oversell. Why does a lot of people thinks Xen/HVM are "bulletproof" against being oversold?

OpenVZ is manly used for overselling.

I will recommend to go for XEN or KVM.

Well, absolutely all virtualizations can be overselled. Do not have illusions that it is possible with openVZ only.

Well some providers actually never over sale. We decided against over saling over a year now and actually you wont even notice difference in revenue. Over saling brings insignificant margins in the end
